In Victoria, if you’re towing a caravan, you follow the posted speed limit—there’s no special towing cap—so 110 km/h is fine where it’s signed.
The exception is if your tow vehicle is a heavy vehicle over 4.5 t GVM, which is limited to 100 km/h.
Make sure your rig is within its rated limits, your trailer brakes are up to snuff, and leave a generous gap—caravans hate sudden heroics.
Always obey local signage and current VicRoads rules; the only thing faster than your caravan should be the speed at which fines arrive.
